Vegetarian Glamorgan Sausages

Makes about 12 sausages

2 tbsp butter
1 large leek, thin sliced
1 tsp minced garlic
1 cup shredded cheddar cheese
1 cup white breadcrumbs
1 tsp dijon mustard
1 egg
salt and pepper to taste
Oil for frying


Add the butter to a skillet on medium high heat and melt.
Add in the leeks and cook until soft. Add in the garlic and cook for a further 5 minutes.
Add all of the ingredients to a large mixing bowl and mix well.
Shape into 12 balls. Refrigerate fro about half an hour before frying.
Fry in a little oil until golden brown.
