Rum Spiced Cranberry Sauce

Makes about 2 cups

1 cup water
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 tsp cinnamon
1 tsp vanilla extract
1 12oz bag fresh cranberries
1 tbsp spiced rum


Add the water and sugars to a medium pan on the stove and heat over a medium heat. Stir the liquid until the sugar is all dissolved and has just started to boil.
Add in the cinnamon and vanilla and stir.
Rinse the cranberries and discard any bruised ones. Add cranberries to the pot and stir.
Keep the mixture over a medium heat for about 15 minutes. The cranberries will start to pop open during this process. Stir occasionally.
Remove the sauce from the heat, add in the rum and stir.
Leave to cool before serving.
