Perfect Garlic Roasted Chicken

Makes 3 servings

3 chicken breasts
2 tbsp salt for brine (optional)
1 tsp salt for seasoning
1 tsp pepper for seasoning
3 tsp minced garlic
1 1/2 tbsp butter


If you plan to brine the chicken breasts start this process about 4-6 hours before you plan to start cooking.
Put the salt for brining in a small mixing bowl, add in about 3 cups of water and stir to combine. Place the chicken into the bowl and make sure the water is covering them. If it isn't, just top up a little more water. Put them in the fridge for 4-6 hours to brine.

When the brine is finished, or if you just skipped it entirely, preheat the oven to 350°F.
Take the chicken breasts out and pat them dry. Put them into a baking dish. Season with salt and pepper. Put a teaspoon of minced garlic on each chicken breast and spread it across the top. Add half a tablespoon of butter to the top of each piece of chicken. Insert the probe thermometer into the thickest part of one of the breasts and set to 165°F. Baked the chicken in the oven until the meat reaches 165°F.

When the chicken is cooked take it out of the oven and place it in a chopping board or plate. Tent loosely with foil and allow to rest for at least 5 minutes to allow the juices to redistribute.
Slice and serve or keep it in the fridge for a delicious addition to weeknight meals.
