Kohlrabi Carrot Fritters

Makes 4 fritters

1 kohlrabi, peeled and chopped into 8 pieces
8 baby carrots
1 egg, lightly beaten
1/4 cup Panko breadcrumbs
Salt and Pepper to taste

Sesame oil to cook


Put the kohlrabi and baby carrots into a food processor and chop until shredded
In a large mixing bowl, add kohlrabi/carrot mix, egg, breadcrumbs, salt and pepper. Mix until thoroughly combined.
Take a quarter of the mixture in your hand, roll it in a ball and flatten slightly. Repeat for remaining 3 fritters.
Heat up a large frying pan and add a couple of tablespoons of sesame oil.
When the pan is hot, add the fritters. Cook until browned on one side and then flip to cook other side. It should only take a few minutes per side.
