Kimchi Fried Rice

Makes 6 servings

kimchi fried rice


8 green onions
1 can of kimchi
2 tbsp sesame oil
1 tbsp minced garlic
1 tsp soy sauce
4 cups cooked rice, preferably day old

Ham, optional


Slice the whole of the green onions diagonally. We will use the green parts as a garnish.
Cut the kimchi into small pieces. The easiest way to do this is to just use some kitchen scissors.

Add sesame oil to a large frying pan and heat on high. Add in the green onions and garlic.
Cook and stir constantly until fragrant.
Add the kimchi and juice from the can into the pan, mix together and cook for a couple of minutes.
Add in soy sauce and continue to cook until the kimchi starts to soften. This should only take a few minutes. Once the kimchi is cooked and softened add in the rice and ham if using.
Turn the heat on the stove down to low. Continue to cook and combine until the rice (and ham) is warmed through and the kimchi mix is evenly distributed.
Garnish with green parts of green onion.
