Homemade Sub Sandwich Rolls

Makes 4 subs

INGREDIENTS

For the Bread
1 1/2 cups lukewarm water
1 1/2 tsp yeast
2 tsp sugar
1 tsp garlic salt
3 1/2 cups bread flour
Cornmeal

For the Topping
1tbsp butter, softened
1/4 cup grated parmesan cheese

DIRECTIONS

Pour the water into a large mixing bowl and add in the yeast. Stir until it is the consistency of miso soup. Add in the sugar and garlic salt.
Add the flour and form a shaggy dough.
Tip the dough out onto a clean surface and knead until it forms an elastic dough and is no longer sticky. If necessary add in a little extra flour a tablespoon at a time. This usually takes around 10 minutes of kneading.
Cut the dough into 4 equal pieces and form into sub shapes about as long as you want the final subs to be. They may look a little skinny right now. but they will increase in size.
Cover a cookie sheet in parchment paper and sprinkle on a little cornmeal. Place the sub loaves onto the cookie sheet.
Cover the loaves with a tea towel and place somewhere warm to rise for about 40 minutes. They should double in size. If you have trouble finding somewhere warm to put the rolls you can always turn the oven on for a few minutes until it gets slightly warm. I have mine hit about 110°F and them turn it off. You only want it warm, not hot.
When the sub rolls have risen uncover them and spread softened butter on top of each one. Sprinkle a little parmesan cheese on top. The butter should help the cheese to stick to the top.
Place a pan of water on the bottom shelf of the oven and preheat to 375°F.
Bake the subs 20-25 minutes.
Remove the subs from the oven and immediately cover with a clean hand towel.
Leave to cool for about 30 minutes.

My go-to filling for these subs are tuna salad. I take a can of tuna, a couple of spoons of mayonnaise, a teaspoon of dijon mustard, a handful of frozen corn and some salt and pepper. Mix it all together. Cut the subs open and spread a little butter or mayo on one side and put cheese on the other side. Melt the cheese under the broiler. Add the tuna filling, lettuce and tomatoes to the sandwich, close it up, cut it in half and enjoy!
