Eggnog Pancakes

Makes about 15 medium sized pancakes

eggnog pancakes


2 cups AP flour
2 tsp baking powder
1 tsp baking soda
3 tbsp sugar
1/2 tsp salt
1 tsp cinnamon
2 large eggs
1 tsp vanilla extract
1 cup eggnog
1 cup buttermilk
1 cup milk
4 tbsp melted butter

Spray oil for frying


Heat griddle to 375°F. I use an electric griddle.
In a large mixing bowl, whisk together dry ingredients: flour, baking powder, baking soda, sugar, salt and cinnamon.
In a separate bowl beat the eggs. Add in the vanilla, buttermilk, milk and eggnog. Whisk together to combine. Slowly add in the melted butter and combine.
Add the wet ingredients into the dry ingredients and whisk to combine. There should be lumps on the batter, be careful not to over mix.
Spray the hot griddle with a little oil and add about 1/4 cup of mixture for the first pancake. Repeat with the rest of the mixture making sure to leave room in-between the pancakes.
When you see bubbles on the top of the pancakes and the edges are starting to dry, flip them over and cook for a minute or two until golden brown.
Serve warm with pancake syrup.
