Egg Salad Sandwiches

Makes 4 servings

INGREDIENTS

8 slices of bread
Butter for spreading on bread
4 large Eggs, boiled and chopped
2 Green Onions, chopped
1/2 cup Mayonnaise
1 tbsp Dijon Mustard

Salt and Pepper to taste

DIRECTIONS

Butter the slices of bread on one side.
Chop the eggs. I have an egg slicer and I slice the eggs one way and then turn them 90° and slice them again.
Add the remaining ingredients to a medium mixing bowl and mix together.
Fill the sandwiches and enjoy!
