Breakfast Pancakes

Makes 8 four inch pancakes

INGREDIENTS

1 1/4 cup all purpose flour
1 tsp baking powder
1/2 tsp baking soda
Pinch of salt
2 tbsp sugar
1 egg, beaten
1 1/2 cups milk (you can substitute buttermilk for milk too)
2 tbsp butter, melted
1 tsp cinnamon
1 tsp vanilla extract

Butter or spray oil for cooking

DIRECTIONS

Heat griddle to 375°F.
Add all the dry ingredients (flour, baking soda, baking powder, salt) to a medium mixing bowl and whisk together. Add in egg, milk, melted butter, cinnamon and vanilla extract and stir to combine. Don't stir too much, lumpy batter makes for great pancakes!
Grease the griddle using the spray oil or butter. Slowly pour pancake mix onto the griddle using a ladle until pancake reaches desired size (I like them about 4 inches) and leave a couple of inches between the pancakes.
When pancakes have bubbles on top and the edges are looking slightly dry it's time to flip them over. Cook until both sides are golden brown.

Serve with butter, syrup, fruit, chocolate chips or whatever you feel like!
