Baked Mac n Cheese with Leeks

3/4 lb pasta (I used rotini and shells)
3 tbsp butter
3 tbsp flour
1 tbsp Dijon mustard
2 leeks, chopped
1 large egg
2 cups shredded cheddar cheese
Salt and pepper to taste

For the Topping
2 tbsp butter
1 cup Panko breadcrumbs
3 tbsp parmesan cheese


Preheat oven to 350°F. Cook the pasta until it is al dente. Drain and set to one side.
In a large pot melt the butter. Add the flour and mustard. Mix together and cook for about 5 minutes keeping it moving the whole time.
Add the milk, leeks, salt and pepper and simmer for about 10 minutes.
Temper the egg into the mixture. Remove from the heat and stir in most of the cheese. Reserve a little for on top.
Fold the pasta into the sauce and pour into a casserole dish. I used a 13" x 9' dish.

For the Topping
Melt the butter in a small pan. Remove from heat and stir in Panko breadcrumbs.
Sprinkle over the top of the casserole. Add remaining cheddar cheese and parmesan cheese on top.
Bake in the oven for 30 minutes.
It will be all bubbly and delicious when you remove it from the oven so wait a few minutes before serving.
